Chasseur is French for "hunter". It is essentially the same word as the English word "chaser".
As a military unit "chasseurs" originated in the 18th century and was a form of light infantery (or cavalry) that did not fight in larger formations, but instead fought in smaller groups who tried to disturb the enemy's movements as much as possible. Their uniforms were often green so that they could function as camouflage.
The German equivalent is the "jäger", which also means "hunter".
